What is organic extra virgin olive oil
Sicilian organic extra virgin olive oil is one of the products most representative of the island’s agricultural tradition. It is produced from olives grown using organic methods, without the use of pesticides or synthetic chemical fertilisers, and processed exclusively using mechanical methods such as cold pressing.
To be classified as extra virgin, the oil must meet specific quality criteria: very low acidity, the absence of defects, and a natural flavour profile reminiscent of fresh olives. Organic farming, as well as ensuring greater attention to the quality of the olives, also contributes to the protection of the environment and biodiversity.
Thanks to its Mediterranean climate and mineral-rich soil, Sicily offers ideal conditions for growing olive trees and producing extra virgin olive oils with an intense flavour profile.
Varieties of Sicilian extra virgin olive oil
One of the things that makes Sicilian extra virgin olive oil unique is the presence of various native cultivars, each with its own specific aromatic characteristics.
You can find a variety of organic extra virgin olive oils in our online shop.
Biancolilla single-variety olive oil
Biancolilla is a very common variety in Sicily and produces a delicate, well-balanced oil with subtle notes of almond and fresh herbs. It is particularly appreciated for its harmonious, mild flavour.
Zaituna single-variety olive oil
The oil produced by Zaituna has a more intense flavour profile and a medium fruitiness with a slight spicy note. It is a bold oil that enhances many Mediterranean dishes.
Moresca single-variety olive oil
Moresca is a cultivar typical of south-eastern Sicily. The oil produced from it has a fruity aroma and vegetal notes, with a good balance between bitterness and pungency.
Blend of extra virgin olive oils
Alongside single-variety oils, there are also blends, produced by combining different cultivars. This technique allows for the creation of oils that are well-balanced and complex in terms of aroma. In the Stipetto shop, you’ll find the La Cave blend, made from a combination of our Biancolilla, Zaituna and Moresca varieties.
Properties and benefits of extra virgin olive oil
Extra virgin olive oil is one of the main staples of the Mediterranean diet and is valued not only for its flavour but also for its nutritional properties. It is rich in monounsaturated fats, polyphenols and vitamin E, all of which contribute to the body’s well-being.
How to use extra virgin olive oil in cooking
A good organic Sicilian extra virgin olive oil is extremely versatile in the kitchen. It can be used as a dressing for salads, bruschetta and vegetables, or to finish off pasta dishes, pulses, fish or meat.
The milder oils, such as those made from Biancolilla, are ideal for light dishes, salads and even desserts, whilst more robust oils such as Moresca or certain blends are well suited to dishes with a more intense flavour.
Frequently asked questions about organic extra virgin olive oil
How can you recognise a high-quality extra virgin olive oil?
A high-quality extra virgin olive oil can be recognised by its fruity aroma and balanced taste between bitter and spicy. These characteristics indicate the natural presence of polyphenols, antioxidant substances typical of fresh olives. The cold extraction method and the origin of the olives are also important factors in assessing the quality of the oil.
What is the difference between organic extra virgin olive oil and conventional olive oil?
Organic extra virgin olive oil is produced from olives grown without pesticides or synthetic chemical fertilisers, in accordance with organic farming standards. Traditional extra virgin olive oil can still be of excellent quality, but it does not necessarily adhere to the same cultivation and organic certification criteria.
What does ‘single-variety oil’ mean?
A single-variety olive oil is made from a single variety of olive. This allows the specific aromatic characteristics of the cultivar used to be brought to the fore. For example, a single-variety Biancolilla oil is generally more delicate, whilst varieties such as Moresca can offer a more intense and structured profile.
Is a single-variety oil or a blend better?
There is no single ‘best’ choice. Single-variety oils allow you to discover the distinctive characteristics of a single olive variety, whilst blends are created by combining different cultivars and offer a more balanced and complex flavour. The choice depends primarily on personal taste and how the oil will be used in the kitchen.
How should extra virgin olive oil be stored?
To ensure that the properties of extra virgin olive oil remain unchanged, it is important to store it in a cool place, away from light and heat. Dark bottles or metal containers help to protect it from oxidation. Storing it correctly helps to preserve the oil’s flavour, aroma and nutritional qualities.
